Factors influencing organic food purchasing behavior.

Abstract

In this paper, the question of the psychographic and socio-demographic factors influencing the buying behavior of organic food is investigated. A causal model of the influencing factors was developed on the basis of the existing literature on purchasing behavior for organic foods. This was empirically tested using the method of structural equation analysis based on data from household panels of the Gesellschaft für Konsumforschung. The purchase decision is primarily influenced by attitudes that are shaped by egocentric values: Consumers buy organic products because they are considered to be lower in residues and generally healthier.
